It consists of an early harvest farm blend whose primary component comes from a Sydra hybrid lot planted in 2011 (the oldest lot still producing on the farm), harvested manually and with much consideration. After picking the cherries, minimal water was used allowing for the formation and full expression of wild yeasts.
